La localidad de Espartillar, ubicada en partido de Saavedra, se prepara para celebrar la Fiesta de la Trufa Negra Argentina – 3º TRUFAR. El evento se llevará a cabo en la sede del club Sportivo Belgrano los días 21 y 22 de junio, con actividades para curiosos y amantes de la gastronomía.

En la celebración bonaerense se podrá disfrutar de una feria gastronómica donde se exhibirán y venderán productos regionales, así como participar en clases magistrales de cocina impartidas por chefs reconocidos a nivel nacional e internacional. Entre los invitados especiales se encuentran Lele Cristóbal, Osvaldo Gross, Ana Irie, Valentina Salezzi y Carlos Valle, quienes compartirán sus técnicas y secretos culinarios.

Una de las atracciones más interesantes será la oportunidad de realizar visitas guiadas a la trufera local, un vasto bosque de más de 20.000 árboles distribuidos en 50 hectáreas, donde se cultiva la preciada trufa negra (Tuber melanosporum), conocida por su aroma inconfundible y su sabor único.

Las entradas para el evento estarán disponibles en la puerta del club Sportivo Belgrano. El costo es de $4.000 por persona para un día y $6.000 para ambos días. Es importante mencionar que la entrada general no incluye las visitas guiadas a la trufera, una experiencia adicional muy valorada por los visitantes.

Pero sí habrá demostraciones gratuitas de la búsqueda de trufas en la Plaza Centenario y recorridos guiados por la localidad.

Con juegos y sorteos de ReCreo, la Subsecretaría de Turismo de la provincia de Buenos Aires acompañará el eventom organizado por Trufas del Nuevo Mundo con el apoyo de la Municipalidad de Saavedra y RECREO itinerante.

La trufa negra es apreciada mundialmente como el “diamante negro” de la gastronomía debido a su valor económico y su versatilidad en la cocina. Este hongo subterráneo, de superficie rugosa y color oscuro, se utiliza tanto en preparaciones crudas como cocidas, destacándose en salsas, ensaladas, embutidos y platos gourmet.

La trufa negra cultivada en Argentina no solo satisface la demanda interna, sino que también se exporta a destinos internacionales como Europa, Estados Unidos y Asia. Su calidad y aroma distintivos han conquistado los paladares más exigentes y posicionan al país como un productor de alto nivel en el mercado global de trufas.

En Argentina, Espartillar es conocida por albergar el mayor campo productivo de trufas negras. Estas se cultivan en truferas, áreas específicamente preparadas para su desarrollo, y se cosechan durante el invierno con la ayuda de perros especialmente entrenados que detectan su aroma característico bajo tierra.
